Pantry Challenge: Day 2

Breakfast: Rice and Beans

Lunch: Chicken Salad (used dried cranberries)

Well, today for breakfast, we ate rice and beans out of the pantry.  Lunch was chicken salad sandwiches.  The chicken salad was made with more left over chicken, red onion, dried cranberries, mayonnaise, mustard and celery.

Dinner is most likely going to be pasta since I have so much in the pantry. :)

Pantry Challenge: Day 1

Looking into my pantry today and my refrigerator, I am deciding what to make for dinner.  I have leftover roast chicken and rice.  It's probably going to be a left over night.  Not a very exciting start to the pantry challenge.

I think maybe I will be using those peas in the freezer in addition to my dinner.

Thinking ahead, I need have ideas for some of the pasta and grains in my panty.
1. Tahini noodles with red bell peppers, green onions, carrots
2. Pad Thai (Rice noodles)
3. Pasta Salad with olives, sun dried tomatoes, chopped onions, herbs, lemon and parmesan cheese
4. Pappardelle pasta with the pork ragu
5. Lasagne (noodles and Pasta sauce)
6. Macaroni Cheese
7. Israeli Couscous with yogurt, cucumber, tomatoes, and dill
8. Tabbouleh

Ideas for Beans
1. Hummus (organic garbanzo beans)
2. Vegetarian Chili (Kidney beans, northern beans, refried beans)

Ideas for other Canned Goods
1. Spanish Rice (Tomatoes and chiles)
2. Pumpkin muffins (pumpkin puree)
3. Coconut Rice (Coconut Milk and Jasmine Rice)

Baking supplies
1. Homemade pizza dough (bread flour and rye flour)
2. Homemade granola (old fashioned oats, coconut flakes, maple syrup)

Freezer ideas
1. Eat the pork ragu
2. Eat the pork wontons with chicken broth
3. Make berry fruit smoothies
4. Make a lamb curry and serve with this naan
5. Make shrimp scampi
6. Have a hot dog cook out

New challenge: Pantry challenge

I read about an interesting idea which was to use what you have in your pantry.  I have a tendency to buy more food and forget to use it. Or I buy something that looks interesting and it gets lost in the back of my panty.  Sometimes if it is really bad, my husband raises his eyes when the pantry is over stuffed.  I just went through the pantry and cleared out solve expired food I found. I worked on the 40 bags in 40 day challenge, which I recommend to anyone that has too much stuff!

 Here's to using what we already have and clearing and cleaning out the pantry and freezer. I am going to compile a list of what I have so that I can figure out what I am going to make.  Maybe this will help me learn how to meal plan. I am terrible at that right now. :)
